Buffet and salad bars: procurement considerations

  • GN configuration: Set the container layout from the actual menu, since a breakfast line and an à la carte salad station need very different GN splits.
  • Cooled and heated zones: Splitting the run into cooled, neutral and heated sections avoids compromising both cold and hot items on one temperature setting.
